Timeless Tzatziki

Perhaps my favorite Greek dish. A traditional dip that is a staple on any summer Mediterranean table. Super easy and healthy. I use Greek yogurt as the base, but of course, you can use a vegan alternative.
Everyone has their own variation, but this is our family recipe!

INGREDIENTS
500 g Greek yogurt
(or alternative of choice)
Half a cucumber
A few sprigs of mint
A few sprigs of chives
Juice of half a lemon
A dash of sherry or red wine vinegar
2 tablespoons olive oil
2 cloves of garlic
Salt and pepper
INSTRUCTIONS
Start by grating the cucumber and letting it drain well.
To avoid the tzatziki becoming too watery, I always try to remove as much water from the cucumber as possible.
Finely chop the mint and chives and mix them with the Greek yogurt.
Add the olive oil, sherry, and lemon juice.
Press the garlic cloves into the tzatziki and season with salt and pepper to taste.
You can always add extra salt or pepper afterward.
Finally, add the drained cucumber to the tzatziki.
Mix everything well and garnish with a sprig of mint or parsley. Enjoy!
